I have always considered food from my own garden to be the most delicious food. As I get older, I realize that there is even tastier food, and that is the wild one. Nettle is my favorite wild food and I have published some recipes on the blog before. Today’s soup recipe is very simple, the hardest part is actually picking a sufficient amount of nettle.

  • 1 small onion
  • 2 cloves garlic
  • 300 g of young nettle tops
  • 750 ml of meat stock
  • 100 ml of sweet cream
  • olive oil
  • salt, freshly ground pepper

Saute finely chopped onion in olive oil. Add the garlic and nettle, and when the nettle is dry, pour in the stock and cook for 10 minutes. Chop with a stick mixer. Add sweet cream, salt and pepper to taste and cook for a few more minutes.
