I don’t know what projice are or what they should taste like, but these Majines are perfect. I had already prepared the recipe before, even when she posted the photo on Instagram, but it was not their turn to try it out. Now I have finally made them and they have already become my favorite salty snack. Easy to make, easy to remember recipe, perfectly crunchy crust that hides a soft and juicy interior …. I’m already thinking about what I’ll add to the dough next time, and I’ll definitely try Maja’s suggestions.
- 150 g feta cheese
- 150 ml of liquid yogurt
- 3 eggs
- 150 g rice flour (I used wholemeal flour)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 75 ml of oil
Crush the feta cheese with a fork. Stir in yogurt and eggs. Add flour, baking powder and baking soda and mix well. Stir in the oil and any additional flavors (spring onions, leeks, chives, ham, etc.). Arrange the mixture in muffin tins almost to the top, which do not need to be greased beforehand. I baked in a mini muffin tin and got 30 pieces, and in a classic size mold the mixture is enough for 12 pieces. Bake for 20 minutes in an oven preheated to 200°C if you are working in a mini muffin tin or 30 minutes in a classic muffin tin. Immediately remove the projice from the mold and cool on a wire rack. Try to resist the warm, I failed 🙂
