If there was one thing that caused me a lot of problems when switching to a gluten-free diet, it was pastries. Hiking, excursions, breakfast … these are all situations in which I often reach for a sandwich. Sometimes my sandwich needs are carefully planned, but there are also those spontaneous situations when I make a decision in a few minutes. And that’s where the problems arise, because I don’t have pastries for sandwiches – recipes with yeast take too much time, the shop is sometimes closed and ready-made pastries are expensive. I found a saving solution in a recipe that often revolves around the Facebook group of gluten-free recipes and I am infinitely grateful to the one who came up with it.

Just one minute to make the pastry mixture and 20 minutes to bake. For 5 pastries with a diameter of 7 cm you need:

In a mixing bowl, whisk the egg with a fork. Add yogurt and salt and stir briefly. Add baking powder and flour and mix until ingredients are combined. Using a spoon, place 5 piles of the mixture on a baking sheet lined with baking paper, flatten them just a little on the surface and shape them into pastries. Bake for 20 minutes in an oven preheated to 200 ° C. Cool the baked pastries on the grill.
