Nothing is better than fine soup. Cream soups have a great advantage for me, I’m not a fan of clear meat soups. As soon as I saw that one of the tasks of the joint meal was soup, I didn’t even look at what a sweet task it was. And broccoli soup is one of our favorites! As variations on the theme are allowed in the game, I made the soup the way I normally do. Sometimes I serve it with crispy bacon, other times with toasted bread cubes, and most often I enjoy it without additives.
- 30 g butter
- 1 small onion
- 30 g of grated celery root
- 500 g of cleaned broccoli flowers (you can also use the root, in which case adjust the cooking time and add the flowers later)
- 1 l of vegetable stock
- salt and freshly ground pepper
- sweet cream for serving
Melt the butter in a bowl and sauté the onion and celery on it. Add the broccoli flowers, pour over the stock and cook until the vegetables are tender (about 10 minutes). Strain with a stick mixer. Season to taste and cook once more. Serve with a little sweet cream and toasted bread.
