To break a series of savory recipes on the blog, I made muffins. I haven’t done them for a long time, and they are very simple and versatile. This time I gave them a winter flair, as a kind of farewell to winter, and they can be combined with other fruits.

- 2 eggs
- 70 ml of honey
- 60 ml of oil
- 175 ml of milk
- 1 orange (juice and zest)
- 1 teaspoon vanilla extract
- 230 g Schar Mix B flour
- 2 teaspoons baking powder
- 100 g of dried cranberries
- orange filling filling or some other spread
Whisk the eggs in a bowl. Add honey, oil, milk, vanilla extract and orange juice and zest. Put flour mixed with baking powder in a mixing bowl. Add the mixture of wet ingredients and cranberries and stir briefly to combine the ingredients. Arrange the mixture in muffin baskets (quantity for 12 muffins) and add a teaspoon of orange jam in the middle if desired. Bake for 15-20 minutes in an oven preheated to 200°C until the muffins get a nice color. Check with a toothpick if it is baked. Sprinkle with powdered sugar if desired.
