Rain, cold, gray, summer heat are behind us …. As the seasons change, so do the desserts we make most often. It’s time to light the ovens and heat the house with fragrant desserts. For starters, I chose something simple, yet so juicy and full of flavor.

  • 3 eggs
  • 100 g of sugar
  • 20 g vanilla sugar
  • 100 ml of milk
  • 75 ml of oil
  • 120g Schar Mix B flour
  • 12 g baking powder
  • 100 g ground carob
  • 1 tablespoon cocoa
  • 3 apples peeled and grated
  • cinnamon to taste
  • 150 g chocolate for glaze

Mix egg yolks and sugar. Add milk and oil and mix briefly. Add the sifted dry ingredients (flour, baking powder, cocoa and carob) and mix until the mixture is combined. Stir in the grated apples. Mix the egg whites into the solid snow and mix carefully into the mixture. Pour the mixture into a baking sheet lined with baking paper. Bake for 25 minutes in an oven preheated to 180°C (check with a toothpick if it is baked). Allow the biscuit to cool. Melt the chocolate for the glaze on a steamer and pour over the cooled biscuit. I cut the cake as soon as the chocolate is slightly squeezed.
