Primal Recipe Tester Spicy Pork Bulgogi

Hands down my favorite bulgogi is Spicy Pork Bulgogi, but you can use this recipe for beef or chicken as well. I serve bulgogi with steamed white rice, leafy lettuce, gochujang and make ssambap (Korean lettuce wraps), or I add it to a bowl with a bunch of seasoned veggies, steamed white rice and top it with a crispy fried egg and gochujang to make bibimbap. And no Korean meal is complete without a side of Baechu Kimchi.

  • 1 lb pork belly or pork shoulder* sliced into small pieces 1/8 inch thick
  • 1 small yellow onion, rough chopped
  • 1 small Asian pear, peeled cored & rough chopped
  • 1/3 c gochujang Make it
  • 4 garlic cloves, peeled
  • 2 green onions, sliced
  • 1 tbsp coconut aminos Buy it
  • 1 tbsp coconut palm sugar Buy it
  • 1 tbsp sesame oil Buy it
  • 1 tbsp toasted sesame seeds
  • 1 inch knob ginger, peeled and rough chopped
  • 1/2 tsp Himalayan pink salt
  • 1/4 tsp ground black pepper

Instructions
  1. Add pork slices, green onions and sesame seeds to a large glass bowl and set aside.
  2. Add the rest of the ingredients to a food processor and process until smooth.
  3. Add the marinade to the bowl with the pork and mix well to combine.
  4. Cover and refrigerate for 1 hour.
  5. Remove meat and discard extra liquid. Pan-fry or grill on a grill pan over medium heat for 3-5 minutes on each side.
Recipe Notes

*It's easiest to cut a partially frozen piece of meat or you can see if your butcher can cut it super thin.
