Primal Recipe Tester Kalbi

Although Kalbi (BBQ Korean Short Ribs) is my second favorite Korean meat after Spicy Pork Bulgogi, I still love it. Of course my Mom made the best, but here is my version using coconut aminos and coconut sugar. I serve mine with steamed white rice, leafy lettuce & gochujang and make ssambap (Korean lettuce wraps) and different kimchis and banchan (Korean side dishes).

Ingredients
  • 3 lbs short ribs flanken cut
  • 1/2 c coconut aminos Buy it
  • 1/2 c coconut sugar Buy it
  • 1 medium Asian pear, rough chopped
  • 1 small onion, rough chopped
  • 2 tbsp sesame oil
  • 6 cloves garlic
  • 1 tbsp toasted sesame seeds
  • 2 green onions, thinly sliced
  • 1 1/2 tsp Himalayan pink salt
  • 1/2 inch knob of ginger, peeled
  • 1/2 tsp gochugaru (Korean red pepper powder) Buy it
  • 1/2 tsp ground black pepper

Instructions
  1. Process all of the ingredients except the short ribs, green onions and sesame seeds in a food processor until smooth. Add the marinade, ribs, green onions and sesame seeds to a glass dish and massage the marinade into the meat.
  2. Cover and marinate in the fridge for at least one hour (overnight is ideal).
  3. Preheat a grill to medium-high heat and cook the short ribs for 3-4 minutes on each side.
